「瑞雲」是為紀念關兼次創業100週年所特別推出的刀具系列。設計靈感來自關傳日本刀的精髓,展現了「不易折、不易彎曲、鋒利持久」的核心理念。此刀具結合傳統日式風格與現代技術,打造出切付型設計的包丁,切割性能極為出色。
「瑞雲」切付筋引結合了柳刃包丁和薄刃包丁的優點,改為雙刃設計,適合切割肉類、蔬菜和刺身等多種食材。刀尖採用劍型設計,適合進行裝飾性切割等需要精準刀尖控制的料理工作。
刀刃由63層大馬士革鋼構成,核心為SPG2(超金鋼)粉末不鏽鋼高速鋼,具備以下特性:

Zuiyun: A 100th Anniversary Commemorative Knife
Zuiyun was created to celebrate the 100th anniversary of Sekikanetsugu, a legacy of the founding blacksmith Matsujirou Kawamura. This knife embodies the core principles of Japanese sword craftsmanship: unbreakable, unbending, and long-lasting sharpness. With its unique kiritsuke design, it offers cutting performance reminiscent of traditional Japanese swords.
The "Zuiyun" kiritsuke sujihiki combines the precision of a yanagiba with the versatility of a usuba. Designed with a double-bevel edge for smooth penetration, it’s suitable for slicing meats, vegetables, and sashimi. The sword-like pointed tip is perfect for decorative cuts and intricate culinary tasks.
