吉金刃物創立於大正8年(1920年),位於新潟縣三條市,由初代吉田金吉創立,現由第四代傳人山本和臣經營。作為三條市歷史悠久的鍛刀品牌,吉金刃物以傳統工藝製作和包丁,並結合當地金屬加工技術,持續超過100年的傳承。
