Moritaka Hamono

🏯 About Moritaka Hamono
Founded in 1293, Moritaka Hamono is now led by the 27th generation, preserving more than 700 years of continuous blacksmithing tradition.
The family's history traces back to the first-generation swordsmith:
Kongobei Minamoto Moritaka.
Originally renowned for forging Japanese swords and traditional weapons, the Moritaka family relocated to Yatsushiro, Kumamoto in 1632, where they continued refining their craft.
Following the Meiji Restoration, as demand for swords declined, Moritaka applied centuries of forging knowledge to agricultural tools and kitchen knives.
While the products have evolved, their commitment to forging, heat treatment, and cutting performance remains unchanged.

🔨 What Makes Moritaka Unique
Even today, Moritaka continues to perform much of its production entirely by hand, including:
✔ Forging
✔ Heat Treatment
✔ Blade Shaping
✔ Grinding
✔ Final Sharpening
Because of this, each knife carries its own subtle variations in the Kurouchi finish, grinding lines, and surface character.
Rather than striving for machine-perfect uniformity, Moritaka embraces the individuality that only true hand forging can create.
Instead of elaborate decoration, Moritaka focuses on what matters most:
✔ Cutting performance
✔ Heat treatment quality
✔ Stable edge geometry
✔ Long-term durability and sharpenability
This philosophy has earned the brand a devoted following among professional chefs and knife enthusiasts around the world.

🧪 Steel | Aogami Super
This series features:
🔹 Aogami Super Core Steel
🔹 Soft Iron Cladding
Aogami Super offers exceptional sharpness, impressive edge retention, and an incredibly satisfying cutting feel.
⚠ Both the core steel and soft iron cladding are reactive. Clean and dry thoroughly after each use to prevent rust.
━━━━━━━━━━━━━━━━━━━
✨ Traditional Kurouchi Finish
The Kurouchi finish is not a coating.
It is the natural oxidized surface created during the forging and heat-treatment process.
Moritaka intentionally preserves this forged finish, giving every knife its own unique appearance and personality.
Simple.
Rustic.
Authentically hand forged.
