關於盛高鍛冶刃物|Moritaka Hamono
創立於 1293 年(永仁元年),盛高鍛冶刃物是日本現存歷史最悠久、仍持續經營的刀匠家族之一,至今已傳承至第 27 代,擁有超過 730 年的鍛造歷史。
品牌起源可追溯至初代刀匠「金剛兵衛源盛高」,早期以鍛造日本刀與武器聞名。1632 年遷至熊本八代後,便持續於當地製刀至今。
明治維新後,日本刀需求逐漸減少,盛高將數百年累積的鍛刀技術轉化為料理刀製作,將日本刀的鍛造精神、熱處理技術與刃付理念完整延續至今日。

Founded in 1293, Moritaka Hamono is one of Japan’s oldest continuously operating bladesmithing families.
Now in its 27th generation, the company carries more than 730 years of forging history.
Its lineage traces back to the first-generation swordsmith:
Kongobei Minamoto Moritaka
Originally known for forging Japanese swords and weapons, the Moritaka family relocated to Yatsushiro, Kumamoto, in 1632, where they have continued producing blades ever since.
Following the Meiji Restoration, as demand for Japanese swords declined, Moritaka adapted centuries of sword-forging knowledge to kitchen knife production.
The spirit of traditional Japanese sword forging, heat-treatment expertise, and edge-making philosophy has been preserved in every knife they produce today.
