Moritaka Hamono
(Aogami Super)

🏯 About Moritaka Hamono
Founded in 1293, Moritaka Hamono is one of Japan's oldest continuously operating bladesmithing families.
Now in its 27th generation, the company preserves more than 700 years of forging history.
Its lineage traces back to the first-generation swordsmith:
Kongobei Minamoto Moritaka
Originally renowned for forging Japanese swords and traditional weapons, the Moritaka family relocated to Yatsushiro, Kumamoto, in 1632, where they have continued producing blades ever since.
Following the Meiji Restoration, as demand for Japanese swords declined, Moritaka applied centuries of sword-forging expertise to agricultural tools and professional kitchen knives.
From swords to culinary knives, the purpose has changed—but the dedication to forging, heat treatment, and cutting performance remains exactly the same.
━━━━━━━━━━━━━━━━━━━
🔨 What Makes Moritaka Unique
Moritaka continues to preserve many traditional hand-production processes.
From forging and heat treatment to shaping, grinding, and final sharpening, every stage depends on the experience and craftsmanship of skilled artisans.
As a result, each knife displays subtle variations in its Kurouchi finish, grinding lines, and overall appearance.
These differences are not imperfections—they are the unique character that only genuine hand-forged knives possess.
Rather than pursuing elaborate decoration, Moritaka focuses on:
✔ Cutting performance
✔ Superior heat treatment
✔ Reliable edge geometry
✔ Long-term durability and sharpenability

🧪 Steel | Aogami Super
This series features:
🔹 Aogami Super Core Steel
🔹 Soft Iron Cladding
🔹 Traditional San Mai Construction
Aogami Super is one of Hitachi's most respected premium carbon steels, offering exceptional sharpness, outstanding edge retention, and excellent wear resistance.
Its crisp, direct cutting feel is one of the reasons it remains a favorite among professional chefs and knife enthusiasts.
⚠ Both the core steel and soft iron cladding are reactive. Clean and dry the knife thoroughly after every use to prevent rust.
━━━━━━━━━━━━━━━━━━━
✨ Traditional Kurouchi Finish
Kurouchi is not a painted coating.
It is the natural oxidized surface created during the forging and heat-treatment process.
Moritaka intentionally preserves this authentic forged texture, giving every knife its own unique appearance and personality.
It remains one of the brand's most recognizable traditional features.

🥬 Why Choose a Nakiri?
The Nakiri is Japan's dedicated vegetable knife, featuring a tall blade and a relatively flat edge profile.
Its design allows the entire edge to make clean contact with the cutting board, making straight push cuts and chopping both fast and efficient.
Ideal for:
✔ Shredding leafy vegetables
✔ Slicing and dicing root vegetables
✔ Preparing scallions, chives, and herbs
✔ Processing large quantities of cabbage, napa cabbage, and other vegetables
✔ Using the wide blade to transfer prepared ingredients
⚠ A Nakiri is designed specifically for vegetables. It is not intended for chopping bones, prying, or cutting frozen foods.
