採用銀三鋼製作,保留傳統本霞單刃結構,再將平面進一步做成鏡面研磨。
不同於整把完全鏡面的強烈視覺效果,這種做法保留了本霞研磨本身的層次,再透過平鏡面增加刀身的精緻感。
搭配撇除了橫手筋先丸輪廓,整體既有傳統和包丁的味道,又多了一點俐落感。

銀三鋼(Ginsan / Silver #3)是日本傳統料理刀中相當具代表性的高碳不鏽鋼。
除了能呈現細緻的刃口之外,也具有良好的耐腐蝕能力。
對這種330mm長尺寸單刃刀而言,日常保養會比傳統白鋼、青鋼更加輕鬆。
這把在傳統本霞基礎上,再將平面進一步研磨至鏡面。
因此刀身不是單純追求整體閃亮,而是利用不同研磨質感,讓平面與刃面的層次更加明顯。

330mm 先丸|修長、俐落的長刃比例
330mm 本身就是相當具有存在感的長尺寸。
實際刃長約320mm、刃寬約3.5cm,整體維持修長比例,再搭配先丸刀尖,讓傳統刺身刀的線條多了一點不同的視覺感。
長刃在處理生魚片與大型魚肉時,可以利用較完整的一次拉切完成切面,減少來回鋸切。
對喜歡長尺寸單刃刀的人來說,330mm 的比例真的非常漂亮。

「郷右馬允義弘」是山脇刃物製作所長年使用的重要品牌銘。
其名稱源自日本刀史中著名的刀工「郷義弘」,山脇刃物所保存的《郷右馬允義弘由来の書》中,也記載了這個品牌名稱的由來與傳承故事。
第三代博次於昭和25年(1950年)正式將「郷右馬允義弘」註冊為山脇刃物製作所的代表品牌,延續至今。

🔨 Forged by Traditional Craftsman Naotaka Yamatsuka
This is a beautifully configured single-bevel knife.
Made with Ginsan / Silver #3 steel, it retains the traditional Hon-Kasumi single-bevel construction while the flat section of the blade is further refined to a mirror polish.
Unlike a full mirror finish that creates a much stronger visual effect across the entire blade, this approach preserves the layered character of traditional Hon-Kasumi polishing while adding refinement through the mirror-polished flat.
Combined with a clean Sakimaru profile without a Yokote line, the overall appearance retains the character of a traditional Japanese knife while giving the long blade a slightly sharper, more streamlined presence.

🔹 Ginsan × Hon-Kasumi × Mirror-Polished Flat
Ginsan / Silver #3 is one of the most representative high-carbon stainless steels used in traditional Japanese kitchen knives.
It is capable of taking a fine cutting edge while also offering good corrosion resistance.
For a long 330mm single-bevel knife, everyday maintenance is considerably easier compared with traditional reactive steels such as Shirogami or Aogami.
This knife begins with a traditional Hon-Kasumi finish, while the flat section is further polished to a mirror finish.
Rather than simply making the entire blade highly reflective, the contrast between different polishing textures creates a more pronounced distinction between the flat and the bevel.

🔪 Sakimaru 330mm | Long, Refined Proportions
At 330mm, this knife already has a considerable presence.
With an actual edge length of approximately 320mm and a blade height of around 35mm, it maintains a long and slender profile, while the rounded Sakimaru tip gives the traditional sashimi knife silhouette a distinctly different character.
The long cutting edge is particularly useful when slicing sashimi and larger pieces of fish, allowing longer, cleaner pulling strokes while reducing the need for repeated back-and-forth sawing motions.

🏯 Goh Umanosuke Yoshihiro | Yamawaki Hamono
Goh Umanosuke Yoshihiro is one of the long-established and important brand inscriptions used by Yamawaki Hamono.
The name traces its inspiration to the renowned Japanese swordsmith Go Yoshihiro. Yamawaki Hamono’s historical record, The Origin of Goh Umanosuke Yoshihiro, also preserves the story behind the origin and succession of this brand name.
In 1950, third-generation Hirotsugu formally registered Goh Umanosuke Yoshihiro as a representative brand of Yamawaki Hamono, and the name has continued to the present day.
The full history behind this brand is actually quite interesting — we’ll save that for another post. 🤣

Naotaka Yamatsuka × Ginsan × Hon-Kasumi × Mirror-Polished Flat × Sakimaru 330mm
We don’t think this knife needs to be overly decorative.
The traditional Hon-Kasumi finish is preserved, while the mirror-polished flat adds just enough refinement.
Combined with the long, slender lines of a 330mm Sakimaru, the knife already has plenty of character on its own.
And one of the biggest advantages of having the blade available without a handle is that the final handle configuration is entirely up to you.
Traditional ebony with white buffalo horn, a distinctive natural wood, or something with a more collectible appearance — you can take your time choosing the combination you prefer.
