銀三鋼|Ginsan
銀三鋼是日本料理刀中相當具有代表性的高碳不鏽鋼。
它兼具良好的耐腐蝕性與細緻的刃口表現,相較高耐磨粉末鋼,在後續研磨與刃口修整方面也更加友善。
這把採用的是夾鋼結構,以銀三鋼作為刃部核心鋼材,再搭配外層鋼材構成刀身。
對實際料理工作而言,銀三鋼最大的魅力之一就是平衡:
好切、好磨,又不用像傳統高碳鋼一樣頻繁擔心鏽蝕。

這把實際到手後,最讓老闆印象深刻的就是:
原廠刃區真的磨得非常薄。
從規格來看,約 9cm 的大刀面、329g 左右的重量,很容易讓人先入為主地認為它是一把偏厚重的中華片刀。
原廠已經把刃區幾何處理得相當俐落,保留中華片刀的份量感,同時又有很輕快的切入表現。
原廠底子夠薄,後續研磨保養也會輕鬆很多。
正常使用只要維持原本的刃口與幾何,不需要一開始就花大量時間重新減薄;再加上銀三鋼本身研磨性相對友善,對長期實際使用來說是很舒服的配置。

🧪 Ginsan | Silver #3
Ginsan is one of the most representative high-carbon stainless steels used in Japanese kitchen knives.
It combines good corrosion resistance with the ability to take a fine cutting edge. Compared with highly wear-resistant powder steels, it is also generally more approachable when it comes to sharpening and edge maintenance.
This knife uses a clad construction, with Ginsan as the cutting-edge core steel combined with outer layers to form the blade.
For practical kitchen use, one of Ginsan’s greatest strengths is its balance:
Easy to cut with, easy to sharpen, and far less demanding about rust prevention than traditional reactive carbon steel.

🔪 What Really Surprised Us Was the Factory Grind
Once we actually had this knife in hand, the thing that impressed us most was simple:
The factory grind behind the edge is genuinely very thin.
Looking purely at the specifications — an approximately 90mm-tall blade and around 329g of weight — it would be easy to assume this is a thick and heavy Chinese cleaver.
But the factory has already given the cutting area a very refined, thin geometry.
It retains the substantial feel you expect from a Chinese cleaver while delivering a surprisingly light and clean cutting action.
The thin factory geometry also makes future sharpening and maintenance much easier.
Under normal use, you can simply maintain the existing edge and geometry without immediately needing to spend a lot of time thinning the blade.
Combined with the relatively sharpening-friendly characteristics of Ginsan, it makes for a very comfortable configuration for long-term practical use.

🥬 195mm Chinese Cleaver
At 195mm long with approximately 90mm of blade height, this size retains the defining characteristics of a Chinese cleaver while remaining highly manageable.
Suitable for:

・Using the broad blade to scoop and transfer ingredients
The large blade surface is especially convenient during high-volume prep.
Once ingredients are cut, they can be scooped directly onto the broad blade and transferred — one of the most useful characteristics of a Chinese cleaver compared with a conventional Gyuto.
