━━━━━━━━━━━━━━━━━━━
Gyuto

🏯 Enjiki Knives |
Enjiki Knives is a Japanese knife shop located in Nara City, Japan, specializing in knives from Sakai.
The shop also has its own sharpening workshop, where skilled craftsmen who studied traditional blade-sharpening techniques in Sakai, one of Japan's most renowned knife-making regions, carry on traditional craftsmanship while creating original kitchen knives suited to modern cooking needs.
Visitors can also observe craftsmen performing blade finishing and sharpening work inside the shop.

🌊 Migiwa (汀・みぎわ) Series
Migiwa is an original kitchen knife series developed by Enjiki Knives.
One of the most distinctive features of this series is the unusual decorative pattern on the blade surface.
These patterns are not layered Damascus steel patterns, nor are they natural forging textures.
Instead, they are created through a special etching process applied to the blade surface.
Because the patterns exist only on the surface, they will gradually wear away as the blade is polished or refinished over time.
The manufacturer describes this concept using the Japanese expression:
(Hakanai Mono)
A form of fleeting beauty that gradually fades through use and polishing.
This impermanent quality is part of the artistic concept behind the Migiwa series.
Due to the nature of the etching process, each Migiwa knife also features its own unique pattern.

🧪 Ginsan | Silver #3 Stainless Steel
Ginsan is a stainless steel commonly used in Japanese kitchen knives.
Compared with traditional carbon steels, it is generally more resistant to rust and discoloration, making everyday maintenance relatively easier.
It also contains sufficient carbon to provide the hardness and cutting-edge performance required for kitchen knives.
For these reasons, Ginsan has become a popular steel choice among Japanese kitchen knife makers.
⚠️ Stainless steel does not mean completely rust-proof.
After each use, we still recommend cleaning the blade, wiping it thoroughly dry, and storing it in a dry environment.

🔪 Gyuto | Japanese Chef's Knife
The Gyuto originated from the Western-style chef's knife and has become one of the most versatile knife types used in modern kitchens.
It is suitable for preparing meat, fish, vegetables, and a wide variety of everyday ingredients.
The 240mm length provides a longer cutting stroke, making it particularly suitable for users who prefer larger chef's knives or frequently work with bigger ingredients.

💰 Price | NT$19,000
Includes the custom-made chestnut wood saya shown in the photos.
We purchased this knife ourselves to study its craftsmanship and share something interesting with everyone.
The selling price is definitely on the higher side, since we're simply adding shipping and operating costs to what we originally paid for it. 🤣
We genuinely hope to have the opportunity to officially introduce Enjiki Knives to Taiwan in the future.
If that happens, we'll be able to share even more of their unique creations with everyone!
Until then, we'll keep working toward that goal! 💪

⚠️ Important Notes About the Migiwa Patterns
The decorative patterns on the Migiwa series are created through surface etching, rather than patterns formed naturally by layered steel.
As the blade undergoes polishing or refinishing over time, these surface patterns may gradually fade or even disappear.
This is an intentional characteristic of the Migiwa series, not a manufacturing defect.
Each knife also features a different pattern, so the actual appearance will vary from blade to blade.
