About Yoshikin Hamono
Brand History
Yoshikin Hamono was founded by the first-generation Yoshida Kanekichi in Taisho 8 (1920) in Shimodajima, Sanjo City. Currently, it is managed by the fourth-generation blacksmith, Yamamoto Kazutoshi. Sanjo City is renowned for its metalworking, with its cutlery and carpenter tools historically influencing nationwide distribution and manufacturing. Yoshikin Hamono continues this legacy, producing handcrafted knives for over a century while adhering to traditional craftsmanship.
Yamamoto Kazutoshi states:
"The phrase 'not trendy' holds profound meaning in my daily knife-making. In this rapidly changing era, staying true to timeless values and the spirit of craftsmanship is what matters most."
He also expresses gratitude to the local community and partners for their support, aspiring to pass on this invaluable tradition to future generations.
Knife-Making Process
Crafting a knife involves numerous intricate manual processes, most of which cannot be mechanized, relying entirely on skilled artisans. Yoshikin Hamono’s knives embody the traditional craftsmanship of Sanjo, with every step—from forging to finishing to packaging—meticulously executed to create premium handcrafted knives.
Purchase Information & Usage Notes
Knife Usage Guidelines
Do not cut frozen food, chop bones (except with specific knives like cleavers or deba), or drop the knife, as it may chip or break.
Clean the knife with water (dish soap can be used) and a sponge, then dry it thoroughly with a towel.
For rust-prone knives, clean immediately after use and apply rust-prevention oil to maintain the blade.
Use a whetstone to sharpen the blade and maintain its sharpness.
Do not use a dishwasher or dish dryer to clean the knife.
Avoid exposing the knife to high heat or open flames.
Even stainless steel knives may rust if improperly maintained.
