吉金刃物製作所由初代吉田金吉於大正8年(1920年)創立於三條市下田島,現由第四代山本和臣繼承經營。三條市以金屬工藝聞名,其刃物與大工工具在全國範圍內具有歷史影響力。吉金刃物製作所傳承這一歷史,製作包丁至今已逾百年,堅守傳統工藝。
山本和臣表示:
「‘不易流行’這句話在包丁製作中意義深遠。即使在變化迅速的時代,也要堅守不變的價值和工藝精神。」
製作一把包丁需經繁複的手工工序,這些工序大多無法機械化,完全依賴熟練工匠。吉金刃物製作所的包丁從鍛造到包裝,皆秉承三條鍛冶傳統工藝,注重每個細節,致力於打造高品質刀具。

Yoshikin Hamono was founded by the first-generation Yoshida Kanekichi in Taisho 8 (1920) in Shimodajima, Sanjo City. It is currently managed by the fourth-generation blacksmith, Yamamoto Kazutoshi. Sanjo City is renowned for its metalworking, and its cutlery and carpenter tools have historically influenced nationwide manufacturing and distribution. Yoshikin Hamono continues this century-old tradition, producing high-quality knives through traditional craftsmanship.
Yamamoto Kazutoshi states:
"The phrase 'not trendy' holds deep meaning in the daily crafting of knives. Even in these rapidly changing times, it is essential to uphold enduring values and the spirit of craftsmanship."
