我們公司所製造的刀具(例如牛刀與洋包丁),可追溯至幕末到明治時期,伴隨歐美飲食文化傳入日本而誕生。與日本傳統包丁不同,洋包丁採全鋼製作方式,結合日本刀工藝。
明治時期刀鍛冶受廢刀令影響,轉而專注於洋包丁的研發,尤其是在關東地區,技術得以傳承並繁榮。戰後,洋食文化普及,牛刀需求大增,但手工製作逐漸被大量生產取代,我們仍堅持全程手工製作,確保傳統技藝得以延續。

The knives crafted by our company, such as gyuto and Western-style knives, trace their origins back to the Bakumatsu to Meiji periods. These knives emerged alongside the introduction of Western culinary culture to Japan. Unlike traditional Japanese knives, Western-style knives are made entirely of steel and incorporate Japanese sword-making techniques.
During the Meiji period, blacksmiths affected by the Sword Abolishment Edict shifted focus to developing Western knives. In the Kanto region, this craft thrived and evolved. Post-World War II, with the growing popularity of Western cuisine, demand for gyuto knives surged. While mass production became common, we remain dedicated to fully handcrafting our knives, preserving traditional craftsmanship.
