🏯 關於二唐刃物鍛造所 🏯
來自 日本青森縣弘前市,擁有 350 年鍛刀歷史。自江戶時代為津輕藩鍛造武士刀,至今仍傳承匠人工藝。

🔹 二唐廣(號國俊)——青森縣無形文化遺產鐵匠,鍛造技藝傳承至 第七代 吉澤俊壽,再由 第八代 吉澤剛 延續至今。
🔹 武士刀工藝的延續:雖然現今不再鍛造武士刀,但同樣的匠人工藝與精神被注入每一把廚刀中。
🔹 「暗紋」鍛造技術:靈感來自 白神山地的暗門瀑布,透過 25 層鐵與鋼 疊加鍛製,搭配 黑染酸洗技術,使刀身紋路獨一無二,並兼具鋒利與堅韌。

避免 切冷凍食材或剁骨(出刃刀除外),防止崩口/斷裂。
✅ 使用後請 以清水+海綿清潔,並擦乾存放。
高碳鋼材質 易生鏽,建議使用後立即清潔並上防鏽油
磨刀保養:使用 磨刀石 保持鋒利。
勿使用洗碗機/烘碗機,避免高溫影響刀具壽命。
不鏽鋼刀 仍需適當保養,否則可能產生鏽斑。

🏯 About Nigara Hamono 🏯
Located in Hirosaki, Aomori, Japan, Nigara Hamono has a 350-year history of blacksmithing. Originally forging samurai swords for the Tsugaru domain during the Edo period, the craft has been passed down through generations.

🔹 Nigara Hiroshi (Kuninobu) – A recognized intangible cultural heritage blacksmith from Aomori, known for his sword-forging expertise. His craftsmanship has been passed down to 7th-generation master Yoshizawa Toshihisa, and is now carried on by 8th-generation Yoshizawa Tsuyoshi.
🔹 Legacy of Samurai Sword Craftsmanship – Although samurai swords are no longer produced due to Japan's sword ban, Nigara Hamono applies the same artisanal techniques to kitchen knives, preserving the warrior spirit in every blade.
🔹 “Anmon” Forging Technique – Inspired by the Anmon Falls in the Shirakami Mountains, this knife is crafted from 25 layers of folded iron and steel, combined with a unique black-dyed acid-wash finish, creating an exceptional and distinct blade pattern.


⚠️ Knife Usage & Care Instructions ⚠️
DO NOT use for cutting frozen food or bones (except for cleavers or Deba knives) to prevent chipping or breakage.
Hand wash only with water and a sponge, then dry immediately.
High-carbon steel knives are prone to rust. Clean immediately after use and apply protective oil when needed.
Sharpening: Use a whetstone for maintenance.
Avoid dishwashers or drying machines, as high heat can damage the blade.
Even stainless steel knives require care to prevent surface rust spots.
