約在 5 世紀古墳時代,鍛鐵技術傳入堺市。自平安時代起,技藝流傳至江戶時代,並因煙草刀與魚刀聞名。今日,堺刀具已成為專業廚師 90% 使用率的工具。
🔸 名刀三作
在室町時代,本阿彌光悦於《亨保名物帳》中記載:「世上有三把名刀」:
相州五郎入道正宗
栗田口藤四郎吉光
鄉右馬允義弘
據說,沒有這三名刀之一,大名家便無法彰顯地位。
🔸 正國的夢與傳承
江戶末期,刀匠正國苦求義弘刀風,始終無法如願。某夜夢見三龜化鶴,飛往北陸,他遂潛心鍛刀,最終自認掌握義弘之技,自稱「鄉右馬允義弘」。此後傳承三代,於昭和25年正式註冊為山脇刃物代表品牌,並持續延續至今。

Forging technology first arrived in Sakai around the 5th century (Kofun period). By the Edo era, Sakai became renowned for tobacco knives and fish-processing blades. Today, Sakai knives are used by over 90% of professional chefs in Japan.
🔸 The “Three Famous Swords”
As recorded by Hon’ami Kōetsu in the Hyōhō Meibutsuchō, the three most treasured swords were:
Sōshū Gorō Nyūdō Masamune
Kuritakuchi Tōshirō Yoshimitsu
Gō Umanosuke Yoshihiro
It was said that without owning one of these, a feudal lord could not claim true status.
🔸 The Dream of Masakuni
In the late Edo period, swordsmith Masakuni longed to replicate Yoshihiro’s style. One night he dreamed of three turtles turning into cranes flying north. Inspired, he immersed himself in forging until he created a blade he believed embodied Yoshihiro’s spirit. From then, he called himself Gō Umanosuke Yoshihiro.
🔸 Modern Legacy
By the 3rd generation, Yamawaki Hamono officially registered “Gō Umanosuke Yoshihiro” in 1950 (Showa 25). The name continues to represent the brand’s finest honyaki and hand-forged kitchen knives to this day.
