「瑞雲」是創業者初代社長河村松次郎的刀匠「兼次」的末裔所創造的100周年紀念型刀具,旨在體現關傳日本刀的特徵,即「不易折、不易彎曲、鋒利持久」的產品理念。此刀具以日本傳統風格為基礎,注重能夠讓人聯想到日本刀的切割性能,開發出切付型的包丁。
特製切付型包丁「瑞雲」結合了薄刃包丁與柳刃包丁的特點,將傳統的單刃設計改為雙刃,使刀刃能夠直入食材,如肉類、蔬菜和刺身等,廣泛適用。此外,刀尖採用劍型設計,適合進行裝飾切割等使用刀尖的料理。
「瑞雲」的刀刃採用63層的大馬士革鋼,以國內外皆受歡迎且難以獲得的最高級刃物鋼SPG2(超金鋼)作為芯材。SPG2(別名:粉末不銹鋼高速鋼)在「高硬度、高韌性、耐磨性、耐腐蝕性」四大刀具條件上均表現卓越。
刀具的刀刃以優質刃物鋼製作成日本刀的蛤蜊刃形狀,確保出色的切割性能及其持久性,且方便重新磨鋒。
通過將刀具在淬火後進行特殊的冷卻處理,達到-70℃以下的低溫,以賦予刀具高硬度與韌性,實現「不易折、不易彎曲、鋒利持久」的特性。
手柄採用七角積層強化木,追求握感的舒適性和和風氛圍的設計。裝飾設計位於握持時易於看到的位置,營造出高級而時尚的外觀。

The "Zuiyun" knife is a 100th anniversary commemorative model created by the founder's first president, Shojiro Kawamura, a descendant of the swordsmith "Kanekinji." This knife embodies the characteristics of the Seki-made Japanese sword, which emphasizes the product philosophy of being "not easy to break, not easy to bend, and maintaining sharpness over time." Built on a foundation of traditional Japanese style, this knife focuses on cutting performance reminiscent of a Japanese sword, leading to the development of a paring knife.
The special paring knife "Zuiyun" combines the features of a thin blade knife and a yanagiba knife, transforming the traditional single-edged design into a double-edged one. This allows the blade to cut directly into ingredients, such as meat, vegetables, and sashimi, making it versatile for various uses. Additionally, the tip of the knife is designed in a sword shape, suitable for decorative cutting and other culinary uses that require the use of the knife's tip.
The blade of "Zuiyun" is made of 63 layers of Damascus steel, using the highly sought-after and difficult-to-obtain premium blade steel SPG2 (Super Gold 2) as the core material. SPG2 (also known as powdered stainless high-speed steel) excels in the four essential criteria for cutting tools: high hardness, high toughness, wear resistance, and corrosion resistance.
The knife blade is crafted from high-quality blade steel into the clam blade shape characteristic of Japanese swords, ensuring outstanding cutting performance and durability while allowing for easy sharpening.
By subjecting the knife to a special cooling treatment after quenching, reaching temperatures below -70°C, high hardness and toughness are imparted to the knife, achieving the characteristics of "not easy to break, not easy to bend, and maintaining sharpness over time."
The handle is made from octagonal laminated reinforced wood, designed to prioritize comfort in grip and evoke a Japanese aesthetic. The decorative design is placed where it can be easily seen while holding the knife, creating a high-end and stylish appearance.
The "Zuiyun" knife is presented in a high-quality paulownia wood box and can be optionally accompanied by a sheath.
